This is a big one! I’m officially ready to learn how to bake - there I said it. If you’ve followed me for a long time, you know I have this non-affectionate relationship with baking. The cook in me, who loves to taste and season as I go, who allows curiosity to lead gets shut down when you tell me that “exact measurements” are a MUST. It’s a turn off, if I’m being honest. How sexy can it be if the entire recipe’s livelihood relies on whether my one cup measurement was off a smidgen? Needless to say, I’ve officially caught the bug (something that didn’t  even happen during the pandemic when everyone else was baking). But, things have taken a turn and I’m digging my heels, starting with baking bread. Not sure how big or small of an undertaking this is but I’m ready for the challenge… I think. Wish me luck! ☺️

After being inspired by this delicious North African dish, and spending weeks creating my interpretation of it, it’s finally here. Of course, I opted for some fire-roasted tomatoes for a little kick and topped it with creamy avocado and cilantro, because these ingredients make everything better.
